CHEF MARK FISCHER’S NEWEST HOT SPOT: PHAT THAI Authentic Thai Cooking in Carbondale, Colorado
Carbondale, CO. — Mark Fischer, chef/owner of Restaurant SIX89 in Carbondale, Colorado, opened restaurant phat thai in late December 2003. Since opening, phat thai has experienced resounding success. phat thai is an affordable yet stylish, authentic “Thai joint.” The restaurant is located in Carbondale’s historic Old Town at 343 Main Street.
The foundation of phat thai’s menu is traditional Thai cooking. The menu is divided into the following categories: Snacks, Small Plates & Bowls, Large Plates & Bowls, and Noodles. Prices range from $7 - $15. Grazing and sharing are requisite elements of the phat thai experience. Following are some sample dishes from the phat thai menu. Mark Fischer will also create daily specials with “gringo” interpretations of Thai cooking.

There were several forces behind Mark Fischer’s decision to create a Thai restaurant in Carbondale. First, he was intrigued by the challenge of a completely new school of cooking. Fischer changes the menu at Restaurant SIX89 weekly, and the clientele appreciates the ongoing creativity of Fischer’s cuisine. However, from a professional standpoint, Fischer was in search of a new adventure. Second, PHAT THAI is a different dining experience than that found at Restaurant SIX89. It features the only authentic Thai cuisine on the Western slope, and while PHAT THAI has white-linen service, it offers an affordable dining option. Locals can dine one night at SIX89 and the next at PHAT THAI. And, with the restaurant’s proximity to SIX89, Fischer can move easily between the two restaurants.
PHAT THAI is located in a turn of the-century building with exposed brick walls and hardwood floors, formerly an old burger joint. Fischer himself oversaw the zen-like renovation of the bar and dining room. The dining room, which features glossy walls, an orange ceiling and subdued lighting, has 70 seats, including a bar-height curvilinear communal table. The bar and communal table are finished with brushed steel.
With Restaurant SIX89, chef/owner Mark Fischer has received regional and national recognition from Gourmet, Food & Wine, The Denver Post, The Rocky Mountain News, 5280 magazine, Mountain Living and more. When he opened SIX89 in Carbondale in 1998, patrons were surprised to find fine cuisine in this town 30 miles northwest of Aspen. Now, Carbondale has become a dining destination.
