CARBONDALE, CO – SIX89 Chef/Owner Mark Fischer’s philosophy about cuisine is straightforward: use classic techniques, multiethnic influences, global flavors, seasonal products, and buy locally whenever appropriate to create consistently good food with a clean approach to flavor.
The food at SIX89 is new American “World Cuisine”…diverse and multiethnic in influence, but true to source and season.
With these simple concepts, Fischer has found great success in SIX89’s constantly evolving menu. Since the seasons and the markets drive the menus, Fischer changes the menu weekly, if not daily.
At SIX89, the menu is divided into SMALL PLATES (appetizers), BOWLS (soups, stews and other appetizers), GREENS (salads), LARGE PLATES (main entrees), and SUGARS (desserts).
In the winter months, the SIX89 dining experience might include braised lamb shanks with tomato apricot chutney, wilted spinach & wild mushroom salad with pumpkin seed oil vinaigrette, crisp veal sweetbreads with carrot spaetzle, or achiote grilled prawns with goat cheese and black bean tostada.
During spring and summer, the menu features items such as roast lamb leg with fig pancakes, stuffed Sonoma quail with white cheddar risotto, or hazlenut-crusted softshell crabs. Vegetarian options, which might include whole grains “tamale” with roasted vegetable in toasted cumin broth, are always available.
