Mark Fischer, CHEF/Owner of SIX89

CARBONDALE, CO – SIX89 Chef/Owner Mark Fischer found himself attracted to the cerebral creativity of the kitchen, while working in a restaurant after receiving a college degree in biology. Figuring he’d give cooking a professional try, he attended the Pennsylvania Culinary Institute, and graduated as valedictorian.

Fischer’s career highlights include four years at Aspen’s Caribou Club, during which he served as sous-chef and then executive chef. Prior to the Caribou Club he was a chef at San Francisco’s famed Fog City Diner. Fischer perfected his culinary talents in the kitchens of New York City’s Mesa and Le Cirque, as well as Table 29 in Napa, California.

He considers himself fortunate to have worked with some of the country’s most talented chefs, including Mark Raynor of Café Allegro in Pittsburgh, Charles Dale of Aspen’s Renaissance, and Cindy Pawlcyn of Fog City Diner and Mustards.

Fischer’s wide variety of culinary experiences culminated in the fall of 1998 with the opening of his own restaurant, Carbondale’s SIX89 Kitchen & Winebar. In a small town located 30 miles from Aspen, Fischer presents his “World Cuisine,” a seasonally based market-driven menu with an aggressive and clean approach to flavor.

Fischer has received accolades from around the country including features in Gourmet magazine, exceptional reviews from The Denver Post, Aspen Magazine, The Aspen Times, The Aspen Daily News, and Mountain Living as well as coverage in Conde Nast Traveller (UK), InStyle, Bon Appetit, Nation’s Restaurant News, and Gear magazine. Response from locals and visitors to Aspen and the Roaring Fork Valley has been overwhelmingly favorable.

When he’s not at SIX89, Fischer is a typical Roaring Fork Valley local with a passion for biking, marathons, triathlons and backcountry skiing.
